1.首先将黄豆清洗干净挑去杂质浸泡一晚

2.然后用浆渣分离机打豆浆(如果没这个机器的就用料理机打豆浆,然后用棉布过滤掉豆渣取豆浆使用。)

3.将打好的豆浆放煤气灶上加热烧开煮10分钟关火

4.这时准备调料,现将小葱和香菜摘好洗干净

5.香菜和小葱切末,芝麻和辣椒粉放入碗里。

6.用炒勺在煤气灶上烧一些热油

7.将热油泼在芝麻和辣椒粉上搅匀

8.炒锅内加入玉米油,凉油下入去皮花生米开火煸炒到花生米变微黄酥脆即可。

9.将炒熟的花生米晾凉放入保鲜袋内,用擀面棍擀碎。

10.将豆浆晾到80度就行了(如果着急就兑冷水降温也行。)

11.然后一手拿着勾兑好的盐卤水瓶徐徐加入盐卤水,一手拿着勺子翻豆浆。

12.等到看到豆浆内出现了絮状的豆花就停止加盐卤水,静置20分钟。

13.这时将豆腐模子准备好,模子里铺上打湿的棉布。

14.静置20分后将豆花一勺一勺舀入豆腐模子,不用压上面那个盖子,就敞开棉布继续静置15分钟豆花就做好了。

15.将切好的葱末香菜末花生碎放在碗里,加入适量的生抽陈醋香油和盐,最后舀几勺刚刚泼好的红油搅拌均匀。

16.将豆花用电饭锅铲子一勺一勺舀进碗里,浇上勾兑好的料汁即可开吃。
小窍门&温馨提示
花生碎的大小随自己喜好的口感而定。
放入豆腐模子的目的就是滤掉多余的水分,不用压盖子。
煸炒花生米用冷油不爱糊。
